Broccoli Burgers

Hello Again,

I took a little break from the kitchen last week (not literally!) but I’m back creating some new exciting recipes this week! First up is these seriously yummy broccoli burgers/balls. Not only are they super tasty but they are packed full of the good stuff for your little ones. These are great on their own or as a side with fish or meat for dinner! They hold together really well so they are ideal for little baby led weaning hands too.

What you will need;

400gms of Broccoli

1 small garlic clove, crushed

1 egg, whisked

25gms of finely chopped scallions

50gms of brown bread crumbs

200gms of grated  mozzarella cheese

350gms of mashed potato

1/4 tsp salt ( can be omitted if making for your little ones)

Method

Remove stalks from broccoli and chop into small florets. Cook in boiling water for 2 mins. Remove broccoli from boiling water and finely chop. Add broccoli to bowl along with remaining ingredients and mix until well combined. Chill for 30 mins in your fridge. Meanwhile preheat you oven to 200.c. Remove mixture from fridge and shape into palm sized balls and place on a lined baking tray. Place in the preheated oven for 15-20 mins until they start to brown. Remove from oven and enjoy. These can be frozen too, just simply shape into balls and place in a ziploc bag in the freezer.
