Paddy’s Day Waffles and Food Art

Hello again!

So with Paddy’s Day fast approaching, and with many people around the world preparing to butcher the Irish name of Patrick into some derivative form of Patricia, I have been experimenting with some St Patrick’s day inspired food. A lovely member of our Facebook page suggested I try a green waffles as a way of sneaking some veggies into our little ones diets. I tried a savoury and a sweet version. Both were a big hit! If you don’t have a waffle iron, don’t fret, this batter can be used for pancakes as well.

What you will need for our Sweet Waffles;

1 tbsp baking powder

1/2 tsp baking soda

pinch of salt

2 tbsp of maple syrup

460mls of buttermilk (any milk will do)

90g of melted butter

2 eggs

2 tbsp of milled chia seeds

1 apple pureed

1/2 tsp of cinnamon

1-2 drops of vanilla extract

2-3 handfuls of spinach

Add all dry ingredients together in a bowl and make a well in the center. Combine eggs, spinach, apple, vanilla extract and maple syrup together in a blender. Add your melted butter,  buttermilk and egg mixture to the dry ingredients and mix until combined.  Heat up your waffle maker. I use a ladle-full of batter for each waffle.

What you will need for our Savoury Waffles;

300g Plain Flour

200g of grated cheese

2 eggs

Alarge handfuls of spinach

1 handful of Coriander

1 Ripe Avocado

1 red onion, diced

450mls of buttermilk/milk

pinch of salt

1 tbsp of baking powder

1/2 tsp baking soda

50g of butter, melted

Combine the flour, baking soda and powder, salt, onion and cheese together. In a blender/ nutribullet blend the eggs, coriander, spinach and avocado. Add to flour mixture along with the melted butter and buttermilk. Mix well then allow to sit for at least 5 minutes. Heat up your waffle maker or pan. Cook mixture according to you waffle maker instructions and serve! We had ours with a little pesto but they are delicious plain as well. These can be kept in ziploc bags in the freezer for up to 1 month. Simply defrost in your toaster for a healthy meal on the go!

Why not try some patriotic smoothies! On the right is a carrot, apple, lemon, orange and ginger smoothie. On the left is a spinach, chia, kiwi, orange and cucumber one.

We had a Paddy’s day inspired lunch this week too! Steamed tenderstem broccoli, orange segments and a tricolour sandwich. I used heart cutters to cut out the leaves of the shamrock. We had avocado, cream cheese and grilled cheese as toppings!
