Chocolate Avocado Chia seed Pudding


This pudding is not only refined sugar free but also contains all the goodness of avocado and chia! Who knew eating chocolate could be so healthy!  This pudding needs to set in the fridge overnight to give the chia seeds time to plump up. I use glass jars with lids to store these. They can be served with fresh or frozen fruit, nuts and seeds, cream or yogurt. img_20160202_152339.jpg

What you will need;

1 Ripe Avocado

3 tbsp of honey or maple syrup

4 tbsp of Cacao powder

80mls of Coconut milk

A pinch of salt

70g of whole chia seeds

560mls of Milk (Any milk is fine)

In a bowl whisk the ripe avocado, honey or maple syrup, cacao powder and coconut milk with a high speed electric whisk or blender until mixture resembles a creamy pudding. Add chia seeds and continue whisking. Add milk a little at a time until well combined. Pour mixture into glass jars and cover with lids. Leave in the fridge overnight or for at least 6 hours, stir before serving and enjoy!
