Homemade Protein Balls

img_20160202_163706.jpgThese are delicious, healthy and full of good stuff. When I am craving sugar, one of these always hits the spot. L loves these and I’ve even let Baby I have a taste! They would be ideal for parties too. So quick and easy to make and best of all no cooking!

200g of Mejool Dates (de-pitted)

30g of Dessicated Coconut and some extra for dusting

100g of Ground Almond

1 tbsp of honey or maple syrup

3 tbsp of cacao powder

1 tbsp of fresh orange juice

2 tbsp of chia seeds

Any dates will work for this but mejool dates are the tastiest. This recipe will make around 20-24 balls depending on the size and they need to be kept in the fridge!

Steep the Dates in boiling water for about 5 mins, drain the water and add to the blender along with the remaining ingredients. Blend until the mixture resembles fine breadcrumbs and all ingredients are well combined. Roll small amounts of the mixture into balls between your palms and rub in coconut. Store in airtight containers in the fridge and enjoy!
