Ultimate refined sugar free Waffles!

Back in the kitchen experimenting with waffle recipes! I was sent some amazing chia seeds from the lovely people at chia bia seeds(available at chiabia.com) last week and I was particularly drawn to one of their products which was a milled chia mix with cinnamon and apple. These are really tasty and they only have a 12th of a tablespoon of maple syrup per waffle. I make a batch and freeze them so I always have a quick and easy breakfast or snack to hand for the kids. I actually think these are better after freezing and thawed in the toaster. They come out lovely and crispy on the outside and really soft on the inside. Mr T, who has a an awful sweet tooth said these were the best yet.

300g of plain flour

1 tbsp baking powder

1/2 tsp baking soda

pinch of salt

1 tbsp of maple syrup

460mls of buttermilk (any milk will do)

90g of melted butter

2 eggs

2 tbsp of milled chia seeds

1 apple pureed

1/2 tsp of cinnamon

1-2 drops of vanilla extract

Add all dry ingredients together in a bowl and make a well in the centre. Combine eggs, buttermilk and maple syrup together. Add melted butter and the buttermilk and egg mixture to the dry ingredients and mix until combined. Add pureed apple and allow to rest for 5 mins. Heat up your waffle maker. I use a ladleful of batter for each waffle. If you are freezing them, allow them to cool fully and then place in ziploc bags and pop them into the freezer.

These would be particularly handy for working parents who may not have time for a sit down breakfast in the morning as these can be eaten on the go! My two had these in the car the other morning. Of all my waffle recipes, these are by far my favourite! Hope you guys enjoy them too!
